Spinach, feta and egg parcels





If someone were to ask me what my favourite meal of the day is, my answer would indisputably be breakfast. The reason is not only the prospect of breaking my 8-hour fast, but also the whole morning ritual of brewing that first cup of coffee, and sitting down to an egg and cheese toast while the morning news resounds in the background.

So in honour of my favourite meal (and a lack of groceries in the fridge), I came up with these super easy and delicious parcels.
If you would like to make them more substantial, you can always add some bacon or shredded chicken.

Serves 2

Ingredients:

Phyllo pastry sheets
Spinach, washed and chopped
1 onion, finely chopped
1 clove of garlic, crushed
2 eggs
1 round of feta cheese
4 tablespoons of melted butter
Salt and pepper, to taste
Sesame seeds to sprinkle over the top

Method:

Preheat the oven to 180’C. Finely chop the onions, add a dash of olive oil in a pan and start sautéing the onions until translucent. While the onions are cooking, wash and chop the spinach. Add it to the sautéed onions, together with the crushed garlic. Add salt and pepper, cover the lid, and let the spinach wilt. Once the spinach is wilted, drain in a colander and let it cool down. Once the spinach is cooled down, press all the leftover moisture out of the leaves. Cut the spinach in smaller pieces, place in a mixing bowl, and crumble the feta cheese over the mixture. Combine and put aside.




Take a sheet of phyllo pastry, and brush the surface with the melted butter. Take another sheet of pastry, place over the first sheet, and also cover with melted butter. Repeat the process until you have four layered pieces of pastry. Take a big spoon full of the spinach and feta mixture, and place it in the middle of the pastry sheet. Make a small little indent in the middle of the spinach mixture, and break an egg into it. Gently gather the four sides of the pastry sheet, and crunch together to form a little ‘moneybag’ parcel. Brush the parcel with the rest of the melted butter, and sprinkle the top with some sesame seeds. Place the parcel in an oven-proof dish, and bake it in the pre-heated oven for about 20min, or until the pastry is nice and golden brown.
